If you're getting new email in though, you may be overwriting the disk space that the deleted items were in.

Try looking in Drafts, but look towards the bottom if sorted by Newest first. Outlook seems to behave a little differently now because it doesn't assign a date to an email unless the email is sent. The drafts now seem like they disappear, but if you know the content you can search and find them.
